Red Velvet & Cream Cheese Frosting

Ingredients:
1 1/3 cups all-purpose flour
3 Tbsp cocoa powder
1/2 tsp baking soda
3/4 cup salted butter, firm but not cold* 
1 cup + 2 Tbsp granulated sugar
2 large eggs
1 Tbsp red food coloring 
2 tsp vanilla extract
1/2 cup whole milk
1 tsp distilled white vinegar
1 recipe Cream Cheese Frosting, recipe follows

Directions:
-Preheat oven to 350 degrees. 
-In a mixing bowl, whisk together flour, cocoa powder and baking soda, set aside. 
-In a separate large mixing bowl, with an electric hand mixer on medium speed, whip together butter and sugar until pale and fluffy, about 3-4 minutes. 
-Add in eggs one at a time stirring after each addition. 
-(Now stand back and change out of any nice shirt you have on and) Add red food coloring and vanilla extract and mix until combine. 
-In a small mixing bowl (or in the measuring cup you used to measure milk), combine milk and 1 tsp vinegar. 
-Add milk mixture and flour mixture to cupcake mixture, alternating in two separate batches, mixing until combine after each addition. 
-Divide batter evenly among 15 paper lined muffin cups, filling each cup about 2/3 full. 
-Bake in preheated oven 18-21 minutes until toothpick inserted into center of cupcake comes out clean. 
-Remove from oven and allow to cool about 2 minutes in muffin tin, then transfer to wire rack to cool for 10 minutes, then transfer to an airtight container to cool completely (this just helps them retain more moisture). Once cooled completely, spread generously with Cream Cheese Frosting (just as sprinkles does, lots of frosting!).


Cream Cheese Frosting

Ingredients:
1/2 cup salted butter, firm but not cold (if using unsalted add 1/8 tsp salt)
6 oz cream cheese, cold (I recommend using Philadelphia brand in this recipe)
1/2 tsp vanilla extract
3 1/2 cups powdered sugar
Red and blue food coloring, for decor (optional)

Directions:
-In a large mixing bowl, using and electric mixer, whip together butter and cream cheese until pale and fluffy (about 1 minute on high speed, then 3-4 minutes on medium high speed). 
-Mix in vanilla extract. 
-Add powdered sugar and beat until smooth. 

Crunchy Cornflakes Cookies

My own homemade cookies.

Bahan-Bahan 
  • 250 gm mentega
  • 3/4 cawan gula aising
  • 1 sudu kecil esen vanilla
  • 1 biji kuning telur
  • 250 gm cornflakes(ramas2 sikit)
  • 2 cwn tepung naik sendiri
  • Mangkuk kertas
  • Ceri merah dan ceri hijau-dipotong kecil
Cara-Cara 

  1. Pukul mentega dan gula aising hingga sebati.
  2. Setelah sebati, masukkan telur dan pukul lagi...setelah itu masukkan esen vanilla.
  3. Masukkan tepung naik sendiri dan cornflakes yg di ramas...gaul sebati guna senduk kayu je.
  4. Masukkan dlm mangkuk kertas dan hiaskan dngn potongan ceri merah dan hijau.
  5. Bakar dalam oven yg telah di panaskan pada suhu 170 C selama 15 minit.

Baked Macaroni with White Sauce @ Dolly's

Pasta and red sauce preparation.

1/2 packed cooked pasta (any shape will do).
800g minced meat
2 tins of Prego pasta sauce
1 large yellow onion - grated
1 carrot - grated
2 celery - grated
5 piece of button mushroom - finely slice
Oregano & parsley herbs
White & black pepper to taste.
Salt & sugar to taste.

1. Saute onion with olive oil until well fragrant.
2. Brown minced meat, until the water is gone. Add a lil bit of oregano and parsley herbs.
3. Add carrot, celery, and button mushroom, and mix well.
4. Pour pasta sauce.
5. White & black pepper, and salt & sugar to taste.
6. Salt & sugar to taste.


White sauce

1 cup olive oil (or other oil)
1 cup flour
2 chicken cubes
2 cups of water
1 cup of milk
1 eggs


1. Heat the oil with slowest heat.
2. Pour 2 chicken cubes - keep whisking
3. Pour flour - keep whisking
4. Pour water - keep whisking
5. Pour milk - keep whisking until it turns to your preferable thickness
6. Add the egg - keep whisking. And turn off the heat.

Preparation:

1. Pour a little bit of white sauce on the baking plate, it works as a foundation.
2. Pour you macaroni n white sauce.
3. Cover with white sauce, and a bit of parmesan cheese.
4. Bake until golden brown 170degree.

Sambal Belacan Negori



Cili besar - 3 biji
Cili padi - 20 biji
Belacan agak2
Gula
Garam
Limau kasturi - 6-7 biji

Cara:
- goreng cili besar & cili padi dalam minyak terendam sehingga bertukar warna sahaja.
- goreng belacan hingga bertukar warna (dalam 30second to 1 min je...)
- masukkan bahan2 yg telah digoreng dalam blender
- perah limau kasturi (jgn bagi masuk biji, nanti pahit), ke dalam blender tu tadi
- blend!!
- lepastu, tuang kedalam mangkuk, masukkan gula n garam, adjust ikut rasa.
- last sekali, masukkan hirisan limau nipis ke dalam sambal itu dan gaul
- sedia di makan!

Chocolate cake's Topping

Untuk Topping :

2 sudu majerin
3 sudu besar susu cair @ air panas
1/2 cawan serbuk koko
4 sudu besar susu pekat

-Masak secara double boiler / biarkan sebentar & Curahkan atas kek

Steamed moist choc cake

3/4 bar of butter (1 bar= 250g)
1 cup of castor sugar
1/2 can of Full Cream Evaporated Milk (about 200g)
2 Eggs,lightly beaten with a folk
1 cup of Plain flour
1/2 cup of Cocoa powder
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Vanilla Extract or 1 tsp Vanilla essence

1. Combine castor sugar,evaporated milk,vanilla extract or essence and butter in a saucepan.
2. Stir over low heat until sugar is dissolved and butter is melted,off fire and keep warm.
3. Add the beaten eggs into the slightly cold Evaporated milk mixture and stir till well mix.
4. Sift the flour,cocoa powder,baking powder and baking soda into a large mixing bowl then pour the eggs mixture over the flour and stir till well mix (cake batter should be runny).
5. Heat up the steamer.
6. Lined and greased a 8 or 9 inch baking pan.
7. Pour the batter into prepared pan and place the pans into the steamer and cover the top of the pan loosely with a piece of aluminium foil.
8. Steam over medium heat for 45 mins.
9. Cool the cake in pan before turning out for further decoration.

Kek batik Original / Kek Marie Original

Yes, gerenti sedap. Kalau tak sedap sila komen, kalau sedap, sila kongsi resipi ini dengan kawan2 ye.

Ini resipi ut 1 bahagian, agak banyak la jugak. Kalau nak buat sikit, bahagi la 2 semua adunan.

Bahan2:

600 g biskut marie (2 pek) or digestive biscuits
8 biji telur
2 sk vanila esen
1 buttercup
1 1/2 cawan gula
2 sb penuh serbuk koko (saya guna Hershey's)
2 sk gravy browning (ni mmg susah nak cari, kalau takde tak payah letak. Kalau letak mmg sgt sodap).

Cara buat sangat mudah.

- Blend semuaaaaaa bahan2 kecuali biskut marie.
- Masukkan dalam kuali, buka api sederhana.
- Bila nampak likat n pekat n coklat2 gelap, tutup api n masukkan biskut marie n kacau hingga rata.
- Masukkan dalam dulang n penyek2.
- Siap.
