Sambal Tumis

This Malay traditional recipe I learn from my beloved Mama. Mama's Sambal Tumis is well known among her sisters as the best sambal tumis hehe, and I think it is very very true. This recipe is applicable to make Sambal Tumis Telur, Sambal Tumis Ikan Bilis or Sambal Tumis Sotong Kering ;)

Ingredients:
7-8 cili kering (rendam before blend utk buang biji2nya) - blended
1 bawang besar (medium size) - blended
Air asam jawa / tomato kecthup
Kicap
Air
Garam
Gula
To cook:
Tumis cili kering + bawang merah sampai pecah minyak.
Masukkan air, airasam jawa/tomato ketchup.
Bila didih, masukkan kicap (sikit je, sekadar sambal tumis tu tak merah sangat warnanya).
Masukkan gula dan garam secukup rasa.
Masukkan lauk (telur yg telah digoreng, ikan bilis yg telah digoreng atau sotong kering yang direndam semalamam).
