Since it is impossible to find Apam Balik in this country, so I've tried to make the home-made Apam Balik. I got the recipe from Lydia (I know her in the cyber world). I am totally satisfied with the recipe. It's crispy and so yummy! Oh ya, besides Apam Balik, we can also make pan cakes using the same recipe.
Ingredients:
170g plain flourTo cook:
100g rice flour
30g corn flour
150g caster sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs (grade A)
1 tsp vanilla essence
200ml water (I use cold water to get the crispiness)
Blend je semua bahan-bahan hingga sebati dan tepung tidak berkepul-kepul. Masak menggunakan non-stick frying pan (kalau tak ada, sapu butter pada frying pan yang biasa tu),. Kemudian, tabur kacang dan gula (saya tak suka jagung), dan... siap!
