Chicken Teriyaki (Halal)

It is difficult to find Halal teriyaki sauce. Most of the teriyaki sauce contain wine. So to be safe, we better make our own teriyaki ;) I got this recipe from Shu (Joned's wife) who studied in Japan years ago. She's a good cook indeed.

Ingredients for 4 people:
2 parts of chicken leg (ikut resepi asal guna boneless leg)
1 and 1/4 cup water
1 and 1/2 tbsp sugar
2 tbsp mirin (dont use hon mirin because it is wine, use mirin fuu = sintetik mirin or mizkan mirin)
3-4 tbsp soy sauce
4 chillies
To cook:
Tuang minyak sikit dlm kuali, masuk kan ayam; letak bahagian kulit dulu. Bila kulit dah garing kalihkan ayam tu.
Kalau rajin, lapkan minyak dlm kuali yang dah campur dgn minyak dr lemak ayam tu untuk kurangkan bau hanyir ayam n kurangkan kolestrol.
Masukkan air 1 cup dlm kuali dan biarkan hingga ayam masak.
Bila air dah hampir kering, masukkan, baki air, gula, mirin, kicap; biar sampai ayam tukar warna baru masukkan cili.
Masak lagi sikit dgn api perlahan supaya tak hangus.
Siap.

thanks for sharing. i was looking what's a halal substitute for sake/mirin since both are alcoholic (in fact mirin has higher alcohol concentration than sake). will look for the synthetic mirin you recommended in you post. thanks !!!
